Jess here! And before you say anything, yes I know… I forgot the ice. There’s a reason JP pretty much makes all the awesome things in this house, including mixed drinks.
He wrote out this delicious recipe for a blueberry honeydew beerjito and all I had to do was recreate it the next day (aka, when there was some lovely natural light for food photography), but…
What’s even funnier is that I made it once, realized I forgot the ice, and – since I wasn’t happy with my first run anyway – decided to make another one with ice so everything would be perfect… and then forgot the ice again. I blame the brain fog.
By the time I realized I had forgotten the ice (again), I had already finished the drink and, unfortunately, had used up the last of the limes and mint. Ugh. So I kept my fingers crossed that the pictures might still be lovely enough to post as planned and I’m fairly happy with the results (especially for a camera phone).
For those who haven’t tried a beerjito before, the beer basically takes the place of the soda in a traditional mojito and, to be honest, gives it a little bit of balance. A mojito is a pretty sweet drink and the beer kind of evens that out and gives the drink another dimension of flavor (which you know we’re all about in this house!).
We had Red Stripe in the fridge, but with the craft beer craze going on right now, you could really make an exceptionally flavorful beerjito depending on which beer you use – for example, you could use a chocolate beer and a caramel rum to create a dessert-jito!
- 4-6 mint leaves
- 8-10 blueberries
- 3 tsp sugar
- Juice of one lime
- 5-10 ice cubes (depending on glass size)
- 3 oz beer
- 2 oz white rum
- 1.5 Tbsp honeydew puree*
*which is super easy: literally just throw some honeydew in a blender or food processor and puree until smooth!
Muddle your mint leaves, blueberries, sugar, and lime juice (as you would in a regular mojito). Then add your ice, beer, white rum, and honeydew puree. All that’s left is to stir and enjoy — or, as I’ve learned, let your super capable chef partner make one for you 😉
